YEAST Yeast is what makes ethanol from sugars. Yeast is a one celled plant which uses sugars as its food, and as it does, it produces ethanol and CO2. At the same time it multiplies, and the new yeast continues the process. Yeast is absolutely essential for making ethanol. "Regular" yeast purchased from a grocery store is not hardy enough for making ethanol. Special yeast must be used which can withstand higher levels of ethanol and higher heat before dying. The higher heat is advantagiuos becasue it speeds the fernentation pocess along. Our yeast is especially good for making ethanol. You will use much less of our yeast than of other commonly used yeasts to make the same amount of ethanol. It is important not to add too much yeast because it will eat up all of the available sugars and die before it can make ethanol. Too little yeast will just require a longer time to process. Our yeast comes with instructions for amounts to use. Less than one ounce of our yeast will make one batch in the 25 gallon VonHeltzen Still set-up.

ENZYMES Enzymes are very useful for making ethanol when using corn or other starch-based feedstocks. Yeast alone will slowly break starches into sugars, which it can then eat and make ethanol. In order to speed this process up when using a starch, such as corn, as your base material (feedstock) two enzymes should be used: Alpha-amylase and Gluco-amylase. Alpha-amylase takes the starches and breaks them into long sugars (polydextrins), and then the Gluco-amylase takes the long sugars and breaks them into simple sugars, like glucose. These simple sugars are easy for the yeast to eat, and this makes the whole process of making ethanol much, much faster. Our enzymes are highly concentrated and extremely economical to use.
